So anyway, last night I got the lights fixed in the emergency exits, and worked on painting of ceiling tiles for a while, and made some revisions to our budget forecast.

Ceiling Tiles
Sunday was another day without a whole lot getting accomplished. We had another Christmas banquet last night, so I ended up helping out in the kitchen for that. I haven't been cooking much since last Christmas, but that will change when we re-open. I'll be working nearly full-time hours in the kitchen again, to improve quality control and to start working on eventual menu improvements. We don't want to make a lot of changes to the existing menus when we initially re-open in January, because there are too many other things to keep us busy right now, although we will have some minor changes and additions. Essentially though, I'll be working a lot of night-time hours throughout the week starting next month, and I'll basically be acting as the Kitchen Manager. That way, Alison (our overall Restaurant Manager) can focus more on the dining room and make sure that our servers are providing the best possible table service to our customers.
